All good veggies that come from the Farmer's Market come together to form a Ratatouille.

I think the best way to prepare eggplant for any dish is a lengthy process. First slice it and then salt it and wrap in paper towels put some weight on the slices and let it sit at least 30 minutes. When done grab some new dry paper towels and wrap them up again and then use a rolling pin to get the rest of the moisture out. Continue with you favorite way to finish them whether it is sautéing or baking.

I have tried several different techniques to make Ratatouille. My favorite is to sauté all the veggies on the stove separately. I already have my tomatoes simmering in a big pot. Then I add the veggies. Eggplant goes in first for about 10 minutes before the rest of the veggies. Add the rest and simmer for another 10 minutes or so.

Very nice. I love Ratatouille, Yours looks great. I make 3 different ones baked, sautéed and a soup.

Thanks for commenting, Sourdough. I have not tried the soup. I may have to do that sometime!

This is what mine looks like ruff chopped veg, and all the tomato juice, if necessary I add canned diced tomatoes as well it depends on how juicy your tomatoes are, salt and taste,salt and taste, salt and taste, and to finish add lots of butter. when I do bean hole bean suppers I will make a large 4 gal. cast iron bulge pot, cooked over hot coals some people don't eat beans so this is for them, never any left they will buy any that's left.
