Tomato,Onion and Cucumber salad. S&P,EVOO,red wine vinegar and italian (flat ) parsley or arugula. Just use the flesh of the tomato or it will be too watery, kirby or english cukes ( reg. cukes:peel and remove seeds) Chop everthing up, thin slice the cukes,onion ( I like red onion )drizzle oil over it and sprinkle the vinegar, finely chop the parsley, S&P to taste, don`t have to be exact.Cover the salad and refrigerate overnight is best. You can squeeze fresh lemon when you serve it. Great Summer salad but I love it year round.

Dixiegirl, If I was making Cucumber & Onion ( no tomato ) salad, I`d use white vinegar. 6 pickling cukes, 1/2 med Vidalia, 1/2 cup w. vinegar, 1/2 cup water, 2 tsp. sugar, salt, 1 garlic clove finely minced. That`s a nice side salad too.

Thanks, Mike. I'll try that one too, but I hate to give up the tomatoes :-) The only reason I was asking about substitution is because red wine anything usually gives me a migraine. I actually like the red wine vinegar the best though. Both of these salads sound wonderful. I already have the first one printed and am about to print the second one. Thanks very much!

Instead of red wine vinegar, maybe balsamic or cider vinegar, if those don`t cause migraine ? Just checked on Balsamic : NOT made from Wine, but from sweet White Trebbiano grape pressings that have not been permitted to ferment into wine. Should not trigger a migraine like red wine. Downside is that good balsamic is expensive and inexpensive balsamic should be skipped altogether. Apple cider vinegar is fermented, but the 2nd fermentation converts alcohol to vinegar so that should not trigger a migraine.

Just ordered Villa Manodori Balsamic vinegar from Amazon.com @ $35/ 8.5 oz...over $4/oz. Good balsamic can run $5,$10,$40/oz for 30 year from Modena. The supermarket brands are not the real thing.

I'm glad you told me that about the balsamic, Mike. I'm going to check with Amazon on the brand you just ordered. I love balsamic vinegar and haven't noticed a problem with migraine after having it. Thanks very much. Did you develop these recipes yourself?

I used to watch those too until I realized I was watching the same shows over and over. I'm sure they've added a lot of different ones since then.

To Dixiegirl ( or anyone who likes good food & photography ) if you get the Food Network, check out `Barefoot Contessa`...the food is fabulous and the crew that shoots it are great. The way the shoot the food presentation is so good you can almost smell & taste it.

Watching an episode of BC on The Food Network called `Photo Finish` where Ina has invited a food photographer and editor of a magazine to shoot some of her dishes, Food & Photography ...perfect together.

Thanks, Mike. Guess I'll have to turn on that channel again. And speaking of food photography...I forgot to compliment you on your excellent food photography. It looked like a shot from Light Cuisine and really caught my attention. And by the way, I have the ingredients for the tomato, onion and cuke salad and am planning to prepare that today for tomorrow's meal. Will let you know how mine turns out.
