I guess this would be Italian meets Mexican. The dish was called Cactus Parmesan. The restaurant was Taco Gato. This might be my new favorite dish. Of course I will try to recreate it at home.

I am going to research my own recipe. I would say it is a Mexican take on Eggplant Parmesan, so instead of using eggplant substitute Cactus paddles also called Nopales. It also has a Mexican cheese Queso Fresco and a tomato based sauce. Served with potato oles instead of spaghetti.
