I just heard some interesting news. The Borscht Belt or as some would call it “The Jewish Alps” is Coming Back! For those of us ‘old geezers’ there are plans to open a museum in memory of those terrific times that were had. I’ll see all of my favorites in the summer.
Fond memories of when I worked there waiting tables while in college.

It was a vacation spot in the Catskill Mountains of New York. It was the setting for the "Dirty Dancing" movie, as well as other movies. The Concord Resort Hotel was one of the last to close in 1998, and was bought and converted into the Resorts World Catskills casino and reopened in 2018.

The Catskills Mountains was a Honeymoon Capital. It became a place to relax and unwind for the week , weekend or summer. Majority of the visitors were Jewish and still are. Now there are Chasidic Jewish enclaves in places like Monsey or Such. That would explain the term “The Jewish Alps” not only those who visited but those comedians who were entertaining.
Borscht is an acquired taste. Also know as cold beet soup usually enjoyed by older Jewish person from “the Old Country.” Having worked along side Chassidim, I understand their customs and tolerances. Yet while aware I wasn’t indoctrinated to their lifestyle. I tried Borscht ONCE! I never tried it again.
By the way, you didn’t miss a history lesson. There are a majority of people who learned about this as happenstance.

Grossingers with my parents when I was a little one. I think that the other one was Fleichmans?
I don't find borscht horrific. My wife grabs a can of sliced beets, a jar of pickled red cabbage and cooks. Sour cream is not mandatory, but a good idea.
Fancification:
• Toss in a bay leaf before heating
• Toss some All-spice balls in before heating
• Replace the juices with beef broth
And I heard that they have green borscht in Russia. ¯\_(ツ)_/¯

That recipe is quite famous. Yep! I still don’t like it. Had one bowl years ago, and I didn’t like it then.
