After delivering to restaurants for years I quickly discovered those to say away from. One that sticks in my mind was in Chinatown (Boston), you had to go down a set of stairs (bulkhead) and then duck down as you walked through the room where the chickens and ducks were hanging on hooks being prepared. No A/C and lots of flies and blood and guts to walk through. I often who they knew on the board of health to be able to get away with it.
Everyone worries so much about restaurant sanitation - but despite some nasty conditions, food borne illnesses is very rare. Often, the nasty restaurants have some of the tastiest food.
