If you have time, go to the Grand Canyon and take a helicopter ride. We did and it was terrific. We also spent time in Sedona, many tours to take and beautiful area to photograph.
We are going to try to get to San Antonio this winter. Any suggestions for us? Thinking about driving to Corpus christi or the hill country to explore also. Enjoy your trip!
My first thought is visiting Sedona.
Two must see locations in San Antonio are Riverwalk and the Alamo.

Downtown San Antonio, the mission trail, and the towns of Boerne, Gruene, and Fredericksburg (shops and Nimitz muesuem) are interesting. Fiesta TX and Sea Life Park if you have young ones. Lots of wineries and distilleries. Drive the back way to Corpus and visit Gonzales ( mission) and Cuero. Corpus waterfront, North Padre Island, Port Aransas, and Rockport (art community) beaches.

I would suggest the Desert Botanical Garden. Research other options. Scottsdale is a suburb on the east side of Phoenix which can be worth a look, depending on your interests. Tucson is about 112 miles east on I-10, but anywhere else is going to be a pretty significant distance away since you only have a couple of days.

For San Antonio, the River Walk is a must. If you like old structures, the many Spanish missions and San Fernando Cathedral are good photo ops. (San Antonio is my home town, although I have been gone a while)
Besides the Desert Botanical Gardens, I would suggest Boyce Thompson Arboretum in Superior, about an hour from PHX. The Superstition mountains can be photogenic, in Apache Junction, 20-25 mins from PHX. If you are in AJ (Apache Junction) take the Apache Trail Arizona HWY 88, past Tortilla Flats to the end of the road, there is parking and a paved trail in a very nice area, adjacent to Fish Creek Road. South Mountain gives a good view of PHX. Fountain Hills is a nice place , Phoenix Art Museum is really good .
Finally, if you like your Mexican food on the New Mexican (hot) side, visit Los Dos Molinos, in Mesa. My favorite, order the Ribs.

San Antonio Zoo is a great photo spot
Old Town Scottsdale has much to shoot - just walk around. For something different, try AZ88 for lunch - it’s also photogenic. Wright’s Taliasin West is worth a visit. Others have mentioned the Botanical Gardens. If you drive to Sedona, or worse, the GC you’ll spend half+ of your visit on the road. Ditto with Tucson and I don’t know where San Antonio came from.
If you're there at the end of February take in a spring training baseball game.
The Heard Museum is pretty good with a vast selection of Indigenous art.
