Well, you can see all the foil in the baffles below the meat, my first smoke I did not use foil and the baffles were a mess, had to use oven cleaner to get them cleaned. Won't make that mistake again. The smoker has baffles because it is a reverse flow, the smoke travels down to the end of the smoker where a regular smoker would have the smoke stack and then comes into the upper chamber and exits near the fire box.
Smoked for seven bars electric smoker.
