What do people think of the add-on telephoto lenses for an iPhone 12? My wife is interested in one. She has an essential tremor that might impact using a telephoto lens, though.

Well, any movement will be exaggerated by a telephoto. The more powerful the telephoto, the more it is exaggerated.
Any possibility there might be a store nearby where one can be tried?

When I was shooting with my IPhone 8+ I used Moment lenses. Specifically, I used the 18mm wide the most. I also have a 60mm tele and a Fisheye lens. I wasn't a fan of the 60 mm tele. It had to be tripod mounted in order to get a sharp image. I just couldn't hand hold it steady enough. Moment lenses in my opinion are the best quality Smartphone lenses you can buy. The only drawback is you have to also use one of their moment phone cases in order to attach the lens. Now that I have moved up to the IPhone 13 Pro Max I don't use the Moment lenses.

I second the Moment 60mm lens. I have the 18mm and 60mm. It will work fine on the 8+. I also use it on the 12 pro Max, but you have to use Moment's camera app. The native Apple app on the newer phones uses combinations of sensors to create a single image. Regarding stability, you have to treat them just like any other longer lens.
