What sort of payment method do you guys use to sell stuff to individuals, that has to be shipped? I know there's Paypal, but is there anything else that's safe and easy?

For the most part, people on the Hog are legitimate photographers whether pros or hobbyists. They are not scammers. I have bought and sold quite a few items here and have not had any big problems. One item I bought had a problem and the seller agreed to refund my money but it was a minor problem and I kept the item. We have a pretty good community here and most of us will not cheat a buyer (I say most because there is always that one, you know). The safest way to transact business is through PayPal. There is a fee to the seller; if they do not wish to pay the fee, it can be negotiated with the buyer. Same for shipping fees, this can be negotiated. When I sell here on the Hog I look at what KEH and MBP are selling an item in like condition for. I then price my item at 75% of that price. I don't need to pay for advertising or running a storefront. If they offer free shipping, you should also, or discount your item another 5% and ask for postage. You would have to weigh the options of doing these things -- the price of the item vs. the price of postage. If you don't want to pay higher than average postage you can specify things like shipped to lower 48 only. PayPal is a protection for both the buyer and seller but only if you do not use the "friends and family" method. With that, there is no protection, and while a seller may suggest that, it would be better for the buyer to pay the fee than to do away with the protection. To do this you would have to pay more for the item since PP will only accept money from the seller. I hope this helps, good luck with your transactions.
