If the photo is completely dark or completely light, who cares how well it is exposed?

In Auto, or Professional, such a result is rather unlikely. Then, the issue is it in focus or composed? In Manual with no knowledge, exposure issues are rather more likely, negating any other issues. Worse, futzing with the exposure causes one to miss the image possibilities, compounding the failed exposure.

I’m not sure of this at all. When I was taking photos completely manually {inside by flash}, my old auto flash ‘nailed’ exposure - it was composition I had to concentrate on.

So why are pro cameras predominantly automatic with manual thrown in as an afterthought like the Z9.
Auto advance in several speeds. auto focus in several modes, auto shutter, auto aperture , auto everything, auto ISO.

Manual is not an afterthought. Besides being a learning tool, it does have several application. One of my favorite is star streaking. Shutter priority, aperture priority are a convenience. Auto ISO assure proper exposure in concert of the mode. Modern cameras are very good in low light allowing Auti ISO to assist the photographer. Shooting in Auto mode may give you shutter or aperture settings that may not give you the best photo.
