With Rice Noodles
I saw a recipe using Thai Chili Jam, an ingredient I was not familiar with. I love new ingredients. I could not find it in my Asian store, but I found roasted red chili paste in the Asian aisle in my grocery store. Recipes are guidelines so I totally made something new. I used ground chicken and mixed in the chili paste and added salt and white pepper. Then made a sauce using soy sauce and the Japanese BBQ sauce that I got the idea for using that from a poster here. Add some garlic and ginger. (both of which I got fresh from the farmer's market this morning) I let that simmer while I made my rice noodles and then threw in some cashews. Topped it off with sesame seeds. It was very good but it needs something green.
Sounds and looks good, Jill. Reminds me of my wife's dan-dan noodles.

Thanks for the comment. I love dan-dan noodles! This was kind of a play on that. I use Udon noodle for that. The rice noodles was a new new ingredient too.

Yeah! That is SO Right up my alley!! I've never had Nam Prik Pao (Thai Chile Jam), but that is now on my list of things for when I get back to AZ and my local Asian Market!!

You did an outstanding job doing and executing the plate.
Looks fantastic! Next time you can use scallions, chives for garnish.
