Shhhhhh.... it's a secret......

.... well, no. Not really. I'm sure there are many of you that do exactly this (or better) for Home Hash Browns!

I start the day before by baking a nice size baker potato in the oven... After it cools, I pop it in the Fridge overnight so it gets nice and firm.
~ The next day, I slice and dice that nicely firm cold 'tater into small cubes and fry them up in butter with salt and pepper 'till it's nice and crispy using my 12" non-stick pan! Serve it up with some eggs any which way but loose and sausage or bacon - and THAT is one Tas.T.ee Breakfast, my friends!!

However, this batch of taters got turned into Corned Beef Hash with leftover corn beef I had in the freezer! Takes a bit more time - but 0 so worth the effort!! ..... Whooohoo!!

Looks good. I will have to try this. I have always sliced my potato's thin and and fried them up with a few onions and had them with sausage and eggs.

I got tired of trying to get the frozen stuff to work - it was OK, but we like this version better. A Really Good variation is to put the 'tater in the smoker when I'm smoking other things! Tasty!

That looks great! I make hash browns all the time. I use Russet potatoes and a mandolin to shred the raw potatoes. I Use cast iron. I am always open to new techniques so I am going to try yours! Yay for you!!
