A store recently opened up at one of our malls that does Chicago style hot dogs (using Vienna hot dogs and poppy seed buns) and Italian beef. I lived in Chicago for 10 years, for mall food this was a reasonable version of both. Their fries were very Chicago-like, too.

I had my first one in Chicago at a street vendor on Michigan Ave many years ago. I was hooked. I can not get them in my area and have to make them myself, starting with making my poppy seed buns.
The one I just had was at a hot dog stand and not a food truck like the rest of the food vendors.

I bake most of our bread but I can't make light hot dog buns like the ones in the store.
However, I have discovered if you take a package of hot dog buns, brush the surface with some beaten egg, and sprinkle on poppy seeds, then put them in a 250 degree oven for 5 minutes, they'll be pretty close to Chicago hot dog buns. I can't get Vienna hot dogs, though.
If you live in eastern Iowa, Portillo's has a location in the quad cities metro area. If you live in western Iowa, there's a Chicago Dog 42 in the Omaha area and one in Lincoln. Haven't found anything in central Iowa yet. (We drive the I-80 corridor a lot.)

I make a lot of bread too. But like you, I buy hot dogs buns and do it pretty much the same way you do, except I just use the egg whites. I get my poppy seeds from Savory Spice company.

FWIW, there are stores in the Quad Cities area that may have Vienna hot dogs. Next time I drive that way I may take a cooler and buy a bunch for the freezer.
