Giant Bowl of Yum!!
This Pho Bo (Beef Pho) soup is made over a two-day period (at least, that is how I do it!) - Beef shank portions start it out by charcoal grilling to sear/braise, then in the oven for an hour to help cook the meat and bone for flavor.
~ In the meantime, a chunk of Ginger and chunks of a coupla' Onions are being charcoal grilled for flavor also - just a bit of char on all...
- star anise - whole cloves - cinnamon stick - fish sauce ... water, of course, also in this soup. I like to make about a gallon of this soup, so I tailor things to that. This gets cooked pretty much all day just short of a boil in a large pot.
~ Also,
when the soup is served, I will add thinly sliced RAW beef rib eye meat (it will cook in the hot broth in the bowl), add bean sprouts (not in this picture), raw scallions, 3-4 nice Basil leaves (not shown), Fresh Cilantro (I have mixed in), And a squeeze of fresh lime.

So freakin' Tasty!! This is not the almost clear broth you get in many restaurants... This one is quite hearty and very satisfying!!

Very delicious it is! Even though I take the Long Way to make Pho, there are many recipes for different types. I'm gonna try some simpler recipes and maybe some of the Pho Broth packets from a local Asian Market.
