So the brisket was outstanding. I had it on the Traeger shortly after 7PM and I pulled it off at around 6:30. I let it rest for 30 minutes and then carved it. These aren’t the greatest shots, but we had company, so I had to make do. iPhone 13 Pro Max.
The sequence is Ready to carve, Carved, and Served.

That’s pretty much it. I check the internal temperature of the meat periodically to check the progress, but that’s just to satisfy my curiosity. The grill has a meat probe that lets you know when the meat reaches the temperature programmed into the controller. Just set the temperature and let the grill do its job.

Funny stuff. No, that should have read AM not PM. I recently had surgery on my right index finger and typing has been a bit of a chore, so things haven’t always been coming out as intended. I almost have to correct every word I type. The tip of the finger still hasn’t got its feeling back and the whole finger is still pretty stiff. So, I put it in at 7AM and smoked it for 11 hours, roughly.
