Now, did they evolve the long bill to reach food without sitting down or did they evolve the legs to keep their bill from poking into the ground all the time??? Inquiring/bored minds want to know.

Very good. All of the specialized adaptations birds have are pretty amazing. I guess if you are going to wade i search of food you need long legs, and if you have long legs then you will need a long bill to reach said food.
