My 5D is currently at version 1.2.x
If I update to latest version, do I have to do it progressively thru all releases or is it OK to just install the newest version?

Unless noted in the install-notes, all firmware is cumulative such that you just install the latest and greatest that includes all prior changes.

I think when you do the update you replace the entire firmware so whatever you did the last time you update it's replaced with the newest firmware.
