The Wife indicated an interest in Roast Chicken. It was shopping day, and fortunately, a very large Chicken available in the meat case. Almost Capon size, though if I hadn't had the Thermopen, I'd have seriously over cooked it by cook book time - too long by half an hour! Stuffing, something new, with Cranberries and candied Walnuts - started them well ahead to soften, Gravy, starting with a roux adding this and that to taste. Too much for two, but Chicken Salad and Soup will follow, and there is an absolutely evil recipe for deep fried leftover stuffing balls I've wanted to try. Will report back on that!
Once again you have me salivating. Tasty looking meal with nicely browned skin on the bird. Excellent display and photo too!

Thanks! Book time for the bird is 3 hours @ 375 degrees, checked with the thermopen and it was done in 2 and a half, so it was just right. If I hadn't caught it the extra half hour would have wrecked it.

That looks like a great meal! Can't wait to hear about the deep fried stuffing.

Thanks, just home cooking! Pretty sure I know where the recipe is, I'll send results - if it is good, I'll add a link.
Fantastic meal, you really love that thermopen. Lol. Chicken looks great!

Thanks a lot! The Thermopen takes away most of the guesswork.
Beautiful quixdraw, look at the size of those drumsticks! Do you do dressing inside or outside the bird?

Thanks, was one big chicken and came out well - I homed in on one of those drumsticks. I have several stuffing variations and do the stuffing outside except for Thanksgiving Turkey.
I looked on Amazon and the Thermopens are all over the board on price. Any suggestions? And BTW, great looking bird!

Thanks, it was a gift, we don't use Amazon, and I get info periodically direct from the company so I suspect the link Tito provided will have been the place. I have the one shown.
