Interesting photo.

They make great fishcakes... scale, head, and gut.
The run the meat (and bones) through a mincer...
The rest is a normal fish cake recipe.

A beautiful and enigmatic fish; often hard to catch and they fight hard on the light lines and small hooks & baits needed to tempt them.

Mullets are delicious fried. We would catch them at high tide in a net. Fun when high tide was at 2 AM.

Mullet are vegetarians, and are difficult (almost impossible) to catch on a hook. They can be snagged, but generally won't bite on bait. Mullet are easily caught with a cast net from seawalls, docks, or boat. They are good fried, and fantastic smoked, and make good fish spread.

So true. It was fun going out at high tide and casting a net. Often they would be feeding in a small cove of reeds or similar grass types. After we cast the net (a long one) we would sneak around and bang the bottom of the boat. The net would literally come alive with motion and we would have our fish. (along with jelly fish, crabs and occasional a ray). My Aunt would batter and fry them. Yum!

Next time you're in the St Pete area slip out to Pasadena and visit Ted Peter's. He smokes mackerel and mullet and it's wonderful, also makes a spread you can't stop eating. http://www.tedpetersfish.com/

I spent three years in England and love the Brit's fish & chips but Ted's stuff puts the Brits in the shade. Trust me. Ted used to ship worldwide overnight but recently stopped that service, much to my disappointment.
