I shoot a lot of local races and on my last one I completely missed the second place finisher along with a few other finishers. I’m set up for case one, was using servo of course with eye detect on. I tracked the guy right up to the finish line then my focus point just jumped to another person around the finish line. I completely missed him. Is there another case I should be using or adjustments that I need to make to case 1, I Haven’t made any adjustments to it otherwise.
Thanks for any advice, I’m signed up to shoot my areas biggest race and I don't need any issues at the finish line.

I've played around with a few different cases. I find it difficult to tell the difference without a serious testing scenario with a willing subjects. Right now I'm using Case #3 with tracking sensitivity set to minus. I have good results with the high school sports I cover so I've left it alone for now.
Canon redesigned the AF / AI Servo tracking with the EOS 1DXII model. That technology has flowed into all the higher-end models since, now including the EOS R models. There was a lot of analysis of the options, most of it now dated in the 8- to 10-year age. I took some advice at the time to use Case 3 as a default action tracking, sports, BIF, etc. Also, make some tuning customizations to the Case 3 default, including adjusting the tracking sensitivity to the + side, I use the first right / + tick. I also lower the AF pt auto switch to 0.

Are you using center point AF or one of the other small area AF settings and keeping it on the subject or one of the wider AF point patterns?

Thinking about it now it now it’s possible that it got switched to a wider area. I had it set on center point to start with. I have a button on the front of my camera set up to switch the area around. May of hit it.
Both my 1D and 1DX have settings to allow (or not to allow) focus to shift to another element that presents itself in the frame. When I'm shooting horse racing, I actually want it to shift to the winning horse. When I'm tracking an animal in the wild, I do NOT want it to shift should something else appear. It seems to work pretty well as along as I remember to change the setting!
