Don't know what camera you have, but with one of mine, D750, you cannot use HDR with RAW, flash lighting bracketing, multiple exposure, time lapse, etc. Simply switching from JPEG to RAW grays out HDR.
In my shooting menu HDR is grayed out. When I try to select it I get a message says it is not available at the current camera settings. I think have a something else selected that preventing an HDR option.
I'm thinking that no matter what camera you have, "Raw" will not allow you to use in-camera alterations. This applies to any items like "Vivid", "HDR", and any other of the so-called "creative Style" settings. Raw is intended to be Raw, meaning unadulterated. On another note---I'm sorry some people feel the need to be so blasted critical because you made a post which was difficult to understand. Yes, it was hard to understand but that doesn't mean you need to be attacked by readers. There are plenty of readers on UHH waiting to attack.

If you have checked the manual, not an aftermarket book, and can't find the issue, try a two button reset back to factory specs.

I think the problem is the other way round. He's using a mode that excludes the use of raw capture. In-camera HDR is one possibility and there will be others depending on what the camera provides. Whatever it is it should be visible on the viewscreen.

With my Canon bodies in camera HDR can only be done when shooting jpeg.

Several people have now suggested that you may be trying to shoot HDR with RAW files, which won't work. Now you can tell us if that is the case.
I don't know of any cameras that can't record in raw with bracketing. I think what you're referring to as bracketing must be in-camera HDR - not the same thing.
