Sadly my father in law passed last Tuesday after a fall a broken hip. He was 96 married 71 years. Mom is home with use this week she is 95. My wife reminds me everyday that mom has lost her appetite and she has difficulty chewing thicker Steaks, chops etc. so Friday I bought some shrimp, calamari, scalops, anchovies and Bomba rice.
I made some paella without shell fish and stuffed calamari. She devoured dinner and my wife and I had a good laugh of course there were left overs so we repeated the process for lunch Saturday I added a pound of linguini for the left over calamari sauce.
Impressive, both photos and food! Your good deed ties in with a discussion my wife & I were having last night and will generate another Thread. Thanks for your post and the idea.

Very appetizing dishes. Tough to pick a favorite. Would you mind sharing the filling you use for the calamari?
Not at all I sautéed onion, shallots, green onion, cut up shrimp, calamari, anchovies. I used 3 potatoes mashed them when cool I combined all ingredients added Salt, pepper, cayenne to taste with lots of fresh parsley. I stuffed the tubes added the tentacles at the end of the tube and closed it with a toothpick. Let it cook in a marinara sauce.
You can use different fish in the recipe clams, mussels, cod fish, crab meat and season as you like I prefer the mash potato mix verses breadcrump or flour

Thank you for that. I only tried stuffed calamari one time many years ago and was not happy with the results. The body was too rubbery and the stuffing expanded too much. Your photo may provide the motivation to try again.
