Today's my wife Nora's birthday. She loves pancakes, especially when I make special ones for her. In my area (and other nearby areas), Hurricane Ida has totally disabled everything. Many rivers are still cresting from the 100 year flood on Tuesday/Wednesday. In just my area, 8.55 inches of rain in a few hours! Nearby, almost 10 inches fell. We thought hurricane Sandy in 2012 was horrific. Ida, geometrically surpasses that! We have not been out since Sunday morning. Many roads still flooded. NY has similar circumstances. 23 people in NJ, so far, have died as a result of the floods. 46 in NY!!
So, I took a quick image with my iPhone 7 Plus. The pancakes were delicious. No syrup needed. The peaches are like sugar!!

Wow!! My wife taught mathematics at Park Jr HS, we lived in Westfield for 23 years and in 2018 bought our Honda Accord at Princeton Honda! It's a small world!!

I used to live in Branchburg and Whitehouse Station, NJ. Lived there thru Sandy. Spoke with many friends back East the past few days....wow, it was awful. Stay safe and dry!

Hi Mark, We "defected" to Delaware from Fair Lawn 2 summers ago where we now have more ex-Jersey folks than native Delawarians, Thankfully Ida left us pretty much OK but just north of here in places like Mullica Hill they got blasted. Saw places like Manville on TV today and they are under water as well.
Just hope you and your family are safe and well.

Pancakes are my fave! I, too, use fresh fruit instead of syrup...but I cook the peaches/blueberries or strawberries down until they are a syrupy consistency. But yummmmo!

My younger daughter lives in Whitehouse Station - her property backs up to Fiddler's Elbow.

You might try "squishing" them in a blender or similar and mix them into the batter, in addition to the "toppings". I do that with blueberries, bananas and strawberries.
It's all yummy!!

The flooded areas are tragic. We live but a couple of miles from those areas. We are very lucky. I feel badly for those who are not so fortunate.
My former wife is from Fair Lawn. I went to under grad at FDU - 58'.
