I have been taking photos for 50 years, most of the past many years with Nikon D7000. I briefly used a Nikon 1 in addition. I recently got a Sony RX10 if and love it. I have sold almost all of my other gear ( had a Tamron 150-600 also). I mainly photograph family, grandkids sports, rowing, birds and some landscape. I should be happy with the Sony and stay with it, but I have rented a Nikon D500 and a Canon Eos R6 (loved the mechanics) while looking for a better and more crisp viewfinder experience. I have considered renting a higher end Sony mirrorless. I think I may be looking for too much. Any therapy would be appreciated!
I'm a Nikon Guy, but my Daughter in Law bought the Sony A7 II, the smallest full frame Sony. Seems to be doing a great job for her her and has a range of lens adapters. She has had a couple of my Nikon lenses on loan.

As to the food only you can make that choice.
Stan, a Hasselblad H6D-400c is in the wings waiting for me to win a lottery.

I use a Canon 5D Mk IV and a Canon R5. I like both but the R5 is beyond amazing.
The camera I seem to shoot most often is my Sony RX10MIV, mainly because I kayak a LOT and it’s my kayak camera. I love it for what it does in enabling me to capture images from a kayak where my other gear would be rather unwieldy. That being said there is no comparison to what I get from my Z7 or D500. Not really comparable to my Olympus E-M1X either.
I feel that need almost daily!
Rent a higher end Sony and be amazed. I was a Nikon and Canon pro user for 40 years (both brands) and moved over to Sony mirrorless and have never looked back. Great prices now on new and good used Sony higher end gear.
FYI, I owned Sony A6500, A7RII, A7RIII, A7III, A9, and now own Sony A7RIV, A1, A7SIII and love the mirrorless class leading innovations and performance from Sony. i have looked at and tried out the latest mirrorless offerings from Nikon and Canon and they are very good, but IMHO Sony still leads the way with proven gear and a more complete mirrorless system. And many more excellent E-mount lens choices (at all prices) are available from many makers than lenses for Z-mount or RF mount, by far.
Cheers
You've gotta satisfy that need!
Nikon has a lot to offer - DSLR or mirrorless. Read reviews and comparisons and go for it! Life is too short and too uncertain to put off getting something you want. "Need" doesn't enter into it, except the need to make yourself happy.

My wildlife gear includes the Nikon D500 with the Nikon 200-500 mm lens. The D500 uses a dual focusing system like the D850 and D5. I use GROUP AUTO FOCUS that nails birds in flight and gives me very sharp bird's eye's.
My other gear is the Sony a9 and Sony 200-600 mm lens. It is also a great combo.
I would also add I have many friends that shoot with the Canon R5 with the Canon 100-500 mm lens, and they also get great results.
Cost wise the Nikon is the least expensive for the best results, then the Sony and the Canon is at the top of the cost chain.
