If I want to exaggerate the charcoal smoke flavor on a piece of meat, fish, burger, etc - I will use Lump Charcoal in my hibachi. The little bit of smoke flavor becomes a point in the prepared meal - not overpowering, but... just there! More so than Charcoal Briquettes, I've found.

You have to be either more courageous or foolish than I to use charcoal in Wildfire country, but I haven't seen "real" charcoal in years. If I recall Gene51 is a "Real" charcoal guy and uses it in his Kamodo. Even a long time ago when I could run my Hibachi at will, it was usually a few briquettes. My third "Forever" gas grill (ridiculously expensive) should be delivered next week, apparently it also can do some smoking. We'll see how it goes, hopefully the company will not vanish and parts become unavailable as with the last two.

I agree. I switched to lump charcoal years ago and never looked back. I use the same starter as you also. Whatever you have going on the hibachi looks good enough to eat. Nice photos.

My "Cheater" method is to throw a few wood chips onto the Heat Guards of my portable gas grill (one of those cheap little black Walmart jobs...). It definitely smokes up a bit and enhances flavor if that's what I'm after... it ALSO makes a big mess to clean up afterward!! Oh well, pay the Piper!!

The Beach Cabin (the coast, OR) here is in a windy zone where charcoal of any sort just is not worth the fire risk most of the time!! The little portable gas grill I use is fairly well wind protected and suffices. And, there's always the Cast Iron pans waitin' to do some work!!

Once I started using that chimney charcoal starter, I never looked back! I don't use starting fluid, either. I use the side burner on my gas grill in AZ, and my gas Weed (no, not THAT kind of weed!!) Burner to start the coals in OR!

In Hibachi years I made my own chimney charcoal starters out of 2# coffee cans. Handle with vice grips when hot, toss and replace when they got ratty.

Studying charcoal grills now. I have gas but sometimes i prefer coal or wood.
Hasty Bake smoker from an outfit in Oklahoma for $1199 with add ons goes to over $1800. Saw damn near same thing at Lowes for $227. Big diff. One thing that slowed me down from the hasty bake was there offering on 3 - 20 lb bags of lump charcoal for $135. I thought that was terribly overpriced especially when i saw 20 lb bag of lump charcoal at my local grocery store for about $6.

I owned a small weber back in 01 to 05, when full timing in motor home and used lump charcoal or regular briquettes with wood chips

Have seen demos, talked to folks, looks like a great system, but has same risks as charcoal out here. Have to be hyper careful about wildfire. Stuck with LP!

No fire risk with a pellet grill. Fully enclosed fire box with an electric powered ceramic ignitor system. Safer than LP!
Had charcoal, LP, natural gas over the years, pellet far superior. Electronic controls, Temperature settable with wifi controls from a smart phone. Check out www.rectecgrills.com. Lots of options. (I did a lot of research before going to a pellet grill)

Interesting! Thanks! I don't do cell phones or devices of that type, and fortunately or unfortunately am awaiting delivery of a new "forever" LP gas grill. Hopefully I'll get a decent lifespan out of this one.

Weber - for years was my Go-To for grilling!! Honestly, I miss the way those types of grills work - Awesomely!!
My last bag of lump, a ten pounder of Mesquite, was $4.__ n' change. They work well, but sparky as all git-out!! Not really safe - so Ill be goin' back to some other stuff I've bought before.

My Brother, my neighbor, and several other people I know swear by their pellet grills! They work awesome! From your images I can see why!!
