I’m half Italian so eggplant has always been part of my diet - eggplant parmigiana is my favorite.

By the way I did give up on trying to get jowl bacon at my farmer's market. But I did find the Guanciale at the grocery store. It was $14.99/lb here. I am going to try it tonight with Brussels Sprouts. Thanks for the new ingredient for me to try!
