Class night, my Wife get home between 8 and half nine. Precise timing impossible, so an easy one. Steam a few shrimp, peel and cut in half lengthwise. Mix up Tarragon Caper Mayonnaise, layer on a baguette with lettuce, tomato and avocado and you are ready to eat. I added half an eat of corn cooked with the two minute trick. The mayo is the key. Mayo, grated sweet onion, capers, a celery heart leaves and all, celery seed and Louisiana Hot sauce. The recipe specifies soft sandwich buns, which I did not have. No tragedy taste wise, but an extremely messy sandwich to eat on a baguette. I'd rate it three paper napkins. Search "Shrimp Sandwich with Tarragon caper mayonnaise" for the exact recipe.

Very good and easy. I recommend using Old Bay Seasoning and a steamer as shown. Do get the right buns, it is REALLY messy on a crisped baguette - the filling wants to slide in every direction. Made ahead of time, a great company lunch.

Thanks a whole lot & for the thumbs. Had it in New Orleans long ago and found a "close enough" recipe, can't find decent rolls just now.
