Always steam ours in a pot with a steam basket. Boiling corn ruins it.

Boiling corn makes it soggy. Dilutes the flavor.

But it’s still good without any cooking.

Not if you pick young kernels and boil for 2 minutes or less. Been doing it for many years. Sweet & popping is the result.

If you pick it too young you don't get the full sweetness. (Field observations).

Try steaming it you will like it guaranteed. A steamer basket is less then $10.

You are correct but it cannot be picked to old either. Press the kernel with your fingernail and if the juices are clear they are OK but if the are milky the sugars have turned to starch. If the kernels are dark yellow they are too old also. That is the problem with old corn is the sugars have turned to starch, they still have good corn flavor but no sweetness.

I steamed it for years. Works fine. The most important function is picking the corn. In season in NJ, I only buy from a local farm. Fabulous, fresh, young corn.

When you nuke it in the husk inside of a paper bag, it steams in its own moisture.

I remove the husk and silk and only microwave it for 45seconds and it is ready to eat.
