A doughnut (or donut) is a type of leavened fried dough. Donuts are popular in many countries as a sweet snack in various shapes and forms. They can be homemade or purchased in bakeries, supermarkets, food stalls, and often from franchised specialty vendors. 'Doughnut' is the traditional spelling, and 'donut' is the simplified version. Both terms are often used interchangeably in the English-language.

Doughnuts are usually deep fried from a flour dough, and typically either ring-shaped or a number of rectangle shapes without a hole, and often filled, but can also be ball-shaped, aka "donut holes".

The earliest origins of modern doughnuts are generally traced to the olykoe ("oil(y) cake") that Dutch settlers brought with them to early New Amsterdam, now New York City. These doughnuts closely resembled modern versions but did not yet have their current ring shape. One of the earliest mentions of "doughnut" was in Washington Irving's 1809 book A History of New York, from the Beginning of the World to the End of the Dutch Dynasty.

National Doughnut Day is celebrated in the United States on the first Friday of June, succeeding the Doughnut Day event created by The Salvation Army in 1938 to honor their members who served donuts to soldiers during World War I. About 250 Salvation Army volunteers went to France in WWI. Because of the difficulties of providing freshly baked goods from huts established in abandoned buildings near the front lines, two Salvation Army volunteers (Ensign Margaret Sheldon and Adjutant Helen Purviance) came up with the idea of providing doughnuts. These were reported to be an "instant hit" with the many soldiers visiting the Salvation Army huts.

A fritter is a portion of meat, seafood, fruit, or vegetable that has been battered (or breaded) and then deep-fried. Fritters are prepared in both sweet and savory varieties. In the United States, fritters are apple pastries made with chopped apples mixed with an egg and milk batter and either pan-fried or deep-fried. I took the dough scraps after cutting the donuts and mixed with Granny Smith apples tossed with brown sugar and cinnamon.

Doughnuts are ubiquitous in the United States and can be found in most grocery stores, as well as in specialty doughnut shops. Per capita, Canadians consume the most doughnuts, and Canada has the most doughnut stores per capita.

With approximately 12,900 locations in 42 countries, Dunkin' Donuts is one of the largest donut shop (and coffee) chains in the world. Krispy Kreme opened their first doughnut shop in Winston-Salem, North Carolina in 1937. They now have 1005 stores worldwide, still mostly in the US and Canada.

These images are my first effort at homemade donuts. I developed my recipe and technique from a few online sources, skipping the one that claimed to be an exact copy of the Krispy Kreme donut. The taste is good, but there needs to be a few refinements. The dough was fluffy light like most commercial glazed doughnuts, but I need to refine where and how long to let the dough rise before frying. You can see a good development of air pockets in the cross section. I used canola but maybe another oil will leave less taste from frying. The oil temperature was too high too. Specialized donut baking sheets are already in the mail to try a devil's food baked donut next. The fritter also needs some refinement, mostly using less apple that is more finely chopped, but the apple flavor in the cinnamon and the crunchy dough is a perfect delicacy.

Good photos and info! I can recall my Mother making donuts. I was given the donut "holes" to share with my friends. She had a donut cutter, so all were pretty much identical. My recollection is that was pre small appliance and she deep fried them in a large pot on the stove top. I'd bet she used Crisco!

This is a well photographed and interestingly narrated series! I really enjoyed it.

Years ago I made donuts quite often. When I started to resemble a donut, I decided to break the habit. I have fond memories of having family over to binge on homemade donuts-raised, glazed and also cake style with coffee for adults and hot chocolate for the youngsters.

Thank you quixdraw! Before adding the glaze, you could taste the oil, even though I used fresh. That's why I think maybe another oil is needed. I was afraid they'd taste like cake, but the flavor is right after adding the glaze.

Thank you srt101fan, quixdraw, Carol, Joe! I never thought to make my own donuts. I'm not even sure where the idea came from a few weeks ago when I started collecting source recipes. It might have started when looking at biscuit cutters and finding donut cutters?

Good Job! I haven't eaten a doughnut in years, thanks to blood sugar issues - but I do remember how much I enjoyed them! These look delicious!
