I have had a Nikon D 850 since the beginning of the year. I thought I had set my SD card for jpeg's and my XQD card just for Raw. Looking through my XQD card the other day, It looks like they are jpeg's as well. I have read and re-read setting up the card slots for the desired types of information saved to each card type. A salesman just told me that there was no way to set up the D 850 in such a way so the jpegs are saved to the SD card and the raw files are saved to the XQD. Is this really correct.

Look at page 39 on the D850 Menu Guide. You can find the guide here:

The salesman is wrong. I am set up that way and use my D850 (and D500) that way every day.
Remember that there are two choices you have to set up. First you have to say which is the primary card, then you have to tell the camera what to do with each card. I don't have my camera right now, but will provide more information later if you still have trouble.

You need to do two things. See pages 88 and 93 in your D850 camera manual. Set both image types, RAW and Jpeg and set how images are recorded on the two cards in the camera. Raw on Primary card and Jpeg on secondary card.
Looking to upgrade to a D850 from a D5500, this is good info.
One tidbit — you can move “up” from XQD card - which I gather are slipping away — in favor of CFExpress cards. You can get link thru Nikon on your laptop to download on an SD card. Then put SD card into D850 and it allows you to reformat to the upgraded CFE card. Otherwise the 850 does not recognize that card.

The manual is helpful but it doesn't have everything, particularly when it comes to cards and various undocumented behaviors.
The only time I've noticed NEF/jpg on the same card is when one card fills up or is pulled. Then both files are written to the same card regardless of the setting directing them to be saved separately.
I noticed problems with shooting images that were loaded to 2 cards. If you shoot a series of quickly taken photos, like birds in flight, it can overload your D850's CPU as it tries to download 2 different copies of each image you take.
My solution was to only shoot in RAW. And I use my XQD as the primary card because it records the images faster than the SD card. The SD becomes my secondary card if the XQD is full.
I also noticed that I rarely accessed the jpg files I was storing on my computer. I was working from the RAW images. So, I stopped making 2 copies and storing a second set of jpg copies that I never actually used.
Set Primary slot XQD to Raw Set secondary slot to Jpg I have mine set that way works fine I really never use Jpg only if I am in a situation that I need that photo and no place to process the image Mike

Do it! Get that D850! Take the time to learn it. Suggest updating the firmware and use CFExpress cards instead of XQD. Faster read/write and they are they way things are going! Need good glass to get shots like the one I attached for you to peruse. 500pF in this case.

If you truly want the camera to record raw+jpg,
Then set the QUAL to raw plus one of the jpg levels of fine, normal or basic. This is done by pressing the QUAL button and turning the rear dial.
In the menus,
photo shooting menu
Set Primary to XQD
Set Secondary Function to RAW Primary- JPEG Secondary
Probably have to change it for each shooting bank that you use.
