This an easy and tasty one. Rub the chicken inside and out with a mixture of Sea Salt, Spanish Smoked Paprika, thyme, garlic and black pepper. Let the chicken come to room temperature. Pierce a lemon and put it on the skewer inside the chicken. Truss the chicken and place the skewer on the rotisserie, high heat with a drip pan under. Cook to 160° in the thickest part of the breast, usually an hour. This was a large chicken, so a bit longer. A "request" dinner served with garlic bread and Avocado tomato salad.

Thanks! Should have, but soups and near Summer don't work well for me. There will be a massive Chicken Salad!

The recipe for the rub is on the Net, if you can't find it let me know. If it is a big chicken you need more rub than is suggested.

Thank you! If there is a pre mix please share the brand name. I mix up a batch when I need it, but being lazy, having it in the spice drawer would be handy!
