Had to go to town and mess around with vehicle service and some shopping. Got home and didn't feel like a lot of cooking or food. When we've had Steak on the Week End, odds are 50/50 that we have Steak Quesadillas later in the week. I make them both ways, folded, or one on one. Always before in my biggest cast iron skillets. I had come across an oven recipe - decided to give it a try. Preheat oven to 375°, put them on a cookie sheet sprayed with cooking spray, top tortilla as well. Twenty minutes. Recipe didn't suggest it, but flip at the halfway point. Not bad. As usual I made the Pico de Gallo too spicy.
Quesadillas are good food and these look better than good! I'm already amazed at all the cooks on UHH.

Thanks! they were not bad - big advantage to the oven method is unlike skillet, you can wander away and do other things as long as you pay attention to the oven timer alarm. I'm expecting some delicious looking food and amazing photos, plus a few good stories.

Thanks! They're probably a touch better in the skillet, but these are darn good and you don't have to stand over a hot stove!
