An English muffin is a small, round, flat yeast-leavened bread which is commonly sliced horizontally, toasted, and buttered.

In North America and North American-influenced territories, they are called "English muffins" to distinguish them from plain muffins, which are larger and sweeter miniature quick breads. English muffins are very similar to bolo do caco in Portuguese cuisine.

The word muffin is thought to come from the Low German muffen, meaning "little cakes". Recipes for muffins appear in British cookbooks as early as 1758. Into the early nineteenth century, muffins were sold door to door in England by hawkers as a snack bread before most homes had their own ovens. The traditional English nursery rhyme "The Muffin Man", which dates from 1820 traces to that custom.

Samuel Bath Thomas emigrated from Plymouth, England, to New York City in 1875. He began making 'English' muffins there in 1880, using his mother's recipe. The Merriam-Webster dictionary dates the origin of the term English Muffin to 1902. In a 1926 trademark filing for a bakery brand by Thomas', it was claimed the term was first used in 1894.

The English muffin is often part of breakfast in North America and Australia, frequently eaten with sweet or savory toppings such as fruit jam or honey, or eggs, sausage, bacon, or cheese. English muffins are an essential ingredient in Eggs Benedict and a variety of breakfast sandwiches derived from it, such as the McMuffin.

The muffins above are an offshoot of sour dough baking. Reading about the cast-off process of making a sour dough starter was concerning. I found I was not alone and there are lots of recipes that call for using the cast-off. The muffins were made on the stove top while another two loaves of sour dough bread were baking in the oven.

Today's images feature two of the 1980s Canon FD manual focus lenses, the FD 85mm f/1.2L and FD 24mm f/1.4L. The lenses were adapted to a Sony mirrorless a7II via a Metabones adapter. Images were captured in RAW and processed in Adobe Lightroom v6.

That was great! We love those things, nothing like a Thomas’ English muffin in the morning. My mom used to make us little pizzas on them too. Now my wife does. May have to try making them at home now that you showed us all about them.

When the family moved to Arizona in 1976 from NYC we could not get Thomas’. Very uncivilized. It wasn’t until about six years later they started carrying them. (Being you are from Chicago you will understand my next statement). It wasn’t until last year that Arizona finally became civilized when they opened a White Castle in Scottsdale.

Nice muffins, they look amazing, I will need to give them a try again, I tried many years ago, I did not end well, thanks for posting. Do you cover the pan at all? are they fried or partly baked? at what temp? to get them baked/cooked inside without burning must be quite the challenge. please and thank you

Thank you tradio, Joe, Jerry, sourdough58, Architect1776, Bob, Elliott, Country Boy, Bill, John, Iron Sight! The cast-iron skillet was one of last year's kitchen additions. Being so heavy, it kind of lives on the stove and gets a lot of use, odd for something that never existing in the kitchen before 2020.
