I use a focusing rail as you probably would expect.
I focus on the point on the subject nearest the camera and then move 'in' taking shots at each new focus point.
I just use my best estimate as to how far to move the focus point for each shot, trying for 50% overlap.
The number of shots is based on the size of the subject and the distance between shots.
To correct for any movement of the camera or subject (usually windy here) I upload to Lightroom and do a crop on the first frame
them run sync and adjust each frame so that the images are aligned. From there I use Helicon Focus to stack the images.
