I have a Epson V500 scanner, I want to scan my black and white negatives, to produce B & W prints or digital images. That I can adjust in photo shop and other software. But I have no idea of the the process, or directions to get my scanner to produce the images I need. Everything I have seen is incomplete, or wrong... Please advise.

Consider the ideas here: https://www.uglyhedgehog.com/t-689142-1.html

I only have experience with the v600 scanner and Epson software. You might want to visit the Epson site and see if they have any updates to download and use. The settings discussed above relate to the 'professional settings' rather than the generic options in the software used / available in 2012.

Epson does have a updated driver for the V500. Your software will do the reversal of the negative to positive. You can also try ViewScan and SilverFast and compare results.

I have an Epson V600 and found a short YouTube video that was helpful. Just do a search on your model.
