Delta 1 Gray Cards can be used to check exposure (you may find you need a minor exposure compensation to get them to function like an incident meter or a camera meter reading through an ExpoDisc — it's usually no more than 1/3 to 1/2 stop). Place in same light as subject, fill the frame without shadowing the card from the predominant light source, and make a manual reading.
When white balancing with a gray card, depending on the brand, you may want a hue offset to neutralize any residual color cast in your JPEGs.
