I Set the ISO, aperture priority, auto bracketing. This way I get the same ISO, aperture and DOF at different shutter speeds. I also use a cable or remote shutter release. This keeps my hands off the camera. I will spot meter highlights and shadows in the scene to determine the number of exposures (avg. 5-7).
My camera happens to have three programmable modes - that is, you can pre-set numerous camera settings, and by selecting the mode to one of the programmables, those settings are instantly in effect. So, one of them is set for HDR - Av mode, bracketing (I default to 5 shots from -2 thru +2), ISO 100, spot meter. Saves a lot of time, and, more importantly, helps to avoid screwing up and missing a good HDR opportunity.
