The origins of bread-making are so ancient that everything said about them must be pure speculation. One of the oldest sourdough breads dates from 3700 BCE and was excavated in Switzerland, but the origin of sourdough fermentation likely relates to the origin of agriculture in the Fertile Crescent several thousand years earlier. ~ Encyclopedia of Food Microbiology

Generally however they do not heat it up at all, but only use the dough kept over from the day before; manifestly it is natural for sourness to make the dough ferment. ~ Pliny the Elder, Roman author, historian and philosopher

As mentioned elsewhere, some new equipment arrived to Chicago last weekend for bread baking. Here's some of the results from the Monday morning baking day.

Love Julia Childs comment!

I remember San Francisco sourdough bread. One hotel kept their starter on the roof. They claimed the cool foggy air resulted in the unique taste.

Nice shots / bread! I could make bread daily and eat most of it. Pretty quick, 33 Wranglers wouldn't fit.

Thank you Linda, Bob, Jim, Mike, PixelStan77, quixdraw! I was slow in catching the bread baking bug. The Washington Post had an article in April about the bread / quarantine craze, including a recipe and a bunch of tips. My next several trips to the local groceries found all the flour sold-out and it couldn't be ordered online either. So, it wasn't until late Summer I finally tried making my sourdough starter. These loaves are only the second effort and turned out much better than the first round. I've done more with the cast-off including tortillas, soft pretzels, cinnamon rolls, crackers, pancakes and a chocolate cake. I might not fit through the cave opening in the Spring ...

I’ve been trying for years to bake GREAT BREAD. Not there yet. Some times it’s good to
Pretty good! Would like to find a GREAT recipe. I’m always amazed at the broad range of interests seen with photographers. Many are woodturners, woodworkers, sailors, hot rod guys, scuba and skydivers. Not to mention cooks and bakers ..I think that those DIVERSE interests and hobbies will see us through this pathetic PANDEMIC. Stay well “bread-maker, photographer!!!.............RJM
