With my Nikon in Manual pressing the EV button makes the thumbwheel control switch between f-stop and shutter speed.
I have my function button set to ISO so if I am not getting what I want I can press it and then use the thumbwheel to control ISO. Upscale cameras have a dedicated button for that.
