I haven’t done much with Photoshop because Lightroom works for what I need to do.
But I’m interested now and then with doing things I know it can do. But the interface really challenges me because I use it so infrequently.
The problem with “books” is that, at the rate Adobe is updating software, the most current version of a book is soon outdated.
I have Martin Evening's book. It is as you say "big and thick" It seems to cover all concerns.
When I started with Photoshop years ago I bought a big fat book.It was outdated from the day I bought it. Hardly ever used it and every time I got stuck on a problem I could never find the answer in the book, but could almost always find the answer on Google. I also signed up with Lynda via the local library.Lynda courses provide many tutorials on Photoshop

Same with cameras. Books can’t keep up with changes and many are turned back to the publishers unsold. Used to see plenty in B&N, etc. Now, not so much and none of the excellent UK magazine offerings have made the shelf since March due to our COVID friend.

How much Photoshop are you wanting to learn? It's a very complex program and by the time you get halfway through most books they will have issued one or two new versions. When I buy instructional books, I like to buy those that have very clear cut examples and instructions. Also a good index where I can look for how to do XYZ and go to that section. Amazon usually will let you peruse a small section of a book so that you can see how it's written and to also read reviews.
The OP wanted books. It was a short and clear request.
The OP did not ask how to learn things. The OP did not ask for video lesson links. The OP did not ask how long a book would match the current software.
