I'm sure you're aware that Adobe has updated Lightroom and Photoshop. I know there's going to be a learning curve to get used to the changes. But this is crazy. The size of the photo I process used to be 3000 MP X 100 MP. Now I'm getting them back at 720 X 480. And in Lightroom I can't develop them at all. This is a mess!
I do not see this at all. What are your export dialogue box settings?
I have mine set for Resize to fit 3000 pixels on the long side.
Probably your most efficient and effective next-step is to open a technical support chat with Adobe. No one here collects your subscription fee.

I think you must have something set wrong. My update does not behave this way at all. Far from a mess, all is working perfectly. (I'm on a mac. I don't know if this makes any difference.)

I'm on a Windows 10 PC, and I also don't have any problems.
I have been using LR exclusively for at least 9 years through however many updates. In that time only once have they bungled an update and left the the program in a state that left me and others upset. That was when they modified the Import module to make it insane. I learned from The Lightroom Queen How to roll back that update and Adobe soon dropped that update, apologized (and hopefully fired the idiot that approved that untested update).
Before the subscription plan you had to look under a rock to find the half price major update. Within the subscription play the updates have been frequent, seamless, and for the most part just adding a slider here and there. The management of frequent updates is one of the pluses of the subscription plan. The recent update is no exception.
I admit I have never tried the CC mobile device versions nor am I qualified to comment on the updates to PS. And I was never willing spring for PS before it was included in the subscription plan. I still get a knot in my stomach when I open PS for the pixel by pixel editing that LS doesn’t offer.
The Lightroom Queen always reviews updates in the free part of her site. Just in case you are too cheap to buy her FAQ book.
PS There is now virtually no difference between MAC and Windows versionS save conforming to the silly differences in their standards for presentation.

I installed all the updates and my settings remained the same... Check your Export dialog settings. Essentially, you can get just about any sort of image you want out of LR.
