An assignment worthy of a photographer (in class) should be take 10 pictures of the same tree, each telling something different about the tree. All photos to be critiqued in class as a group of 10 photos and individual images with the photographer's participation explaining what was the intent/purpose of each picture.

Pictures of trees are really no different than any subject. You can use skill, imagination and effort, or not.

Oh yes you simply cannot be a real photographer unless you photograph a single tree. You didn't know that? 😂
If you want to be a real photographer then get out there and photograph that single tree and stop complaining. You can photograph a Christmas tree if you like. It just has to be a single tree. I see you have done that already. And you have photographed single Christmas trees. So counting the tree in the park, more than once. See? You are indeed a photographer. 😂
Ok seriously, what you seem to be missing is that art is subjective. Just because you don't get it does not make it less significant. If you don't get it don't worry about it. Photograph the things you get.
However IF you really want to gain an understand what people are seeing and why they are photographing single trees, asking here is not the way to gain that understanding. I suggest you go photograph a single tree yourself. First take some time to study it. Walk around it. Look at it as the light changes. You might want to do this several times before you shoot, maybe at different times of the day (or night). A tree is a living creature on a very long time scale. Think about the tree's history, what has passed beneath it. If it could talk the stories it would tell. Then think about an aspect of it you would like to capture. When you have that idea, work to capture it. And please report back here.
FYI It doesn't have to be a single tree, it could be a stand of trees.

You mean the Irish tricolor scene ? Tree-wise waaaaaay too reserved. Good scene but not “The Photographer’s Tree”. No problem. Keep at it ! Your breakthrough will happen:-)

I already commented, but trees are one of my favorite subjects, so I'll post some. I shoot them in color infrared.
