I really dislike very or over ripe bananas. I like them when they are bright yellow and firm. Prior to the Pandemic, I'd buy just two green bananas at a time, but now I do not want to risk exposure and frequent stores. So, I did an experiment. I purchased a bunch of 5 very green bananas and put them in the refrigerator for 2 days and followed this procedure: 1. I took out one banana and left it sit overnight on my kitchen counter in a basket/bowl 2. In the AM it was very ugly looking, but still very firm 3. I carefully removed the skin and discovered it was fine on the inside and tasted delicious 4. I did this each day until the last of the bunch was consumed.
The same trick works for Avocados - they will remain very good for several weeks if put in the fridge as they just begin to soften. Have to try the banana trick.
