I'm surprised more people haven't mentioned the Leica C-Lux or D-Lux options here. I've been using a Leica D-Lux 6 for several years and have been very impressed with the quality of the images I get from it. For more "serious" work, I'll take my D850 or Leica M10, but for fishing trips, etc., where the camera is just going to get tossed in a backpack for quick shots, the Leica C-Lux or D-Lux cameras are a great choice.
