With respect to your question, I only ever shoot in Manual mode, Shutter speed is selected according to what the bird is doing, if its flying, the speeds required are obviously higher, the ISO is set to as low as I can possibly get away with and I set the aperture dependent upon the dof the image demands, if the subject is a distance away, I will try and keep my aperture as open as possible to eliminate as much background as possible, while still taking advantage of the increase in depth of field as the distance to the subject increases.
