I'm going to cook pork schnitzel tonight with greek style roasted potatoes. What is your favourite potato recipe? Please share.

During the winter I bake spuds in my wood stove, almost daily. Also carrots, squash and pumpkin.

Sounds delicious, Tex. I was once into smoking beef and fresh-caught rainbow trout with alder. It was a family favourite.

The Cooks Illustrated/America's Test Kitchen people have a mashed potato recipe with two pounds of potatoes, two heads of garlic, one stick of butter, and a cup of half-and-half.

Sounds good.

Almost any potato recipe for me but a favorite is garlic mashed potatos mashed with roasted garlic, real buttermilk and butter. Leftovers can be made into potato pancakes.

Pagan whores.
Cut into kinda thin home fries.
Soak for 20 minutes in cold water with a pinch of baking soda, drain and dry.
Fry at 400 degrees, 6 minutes.
Hang basket for 4 minutes, and fry again for 4 minutes.
Drain, salt, and a blue cheese and/or ranch dressing dip.
The pounds you gain are not my fault,

I have put mayonnaise into my mash potatoes. Try 1/2 cup of your cream and 1/2 cup of mayo. I think you will be pleasantly surprised as to how good it tastes.

I would try this but I don't own a deep fryer. Maybe I can do the recipe in my cast iron sk**let.
My first choice would be the more expensive refrigerated blue cheese dressing. Love that stuff.

Potatoes are supposed to be healthy, but any way you fix them that is edible makes them unhealthy.
(butter, sour cream, fried, etc.)

I suppose if you go light on the butter, sour cream, bacon bits, etc., you will be fine.

How true. I really don't watch what I eat. My dad died at the age of 92. He was a sawed-off little man that didn't exercise, smoked cigarettes, eat and drank wh**ever he wanted. I hope I have his genes. I don't want to have any restrictions, just like pops.
