Pentax X-5 -- I think I blew it

Yes, the K-5 is a DSLR I own one. That coincidental X-5 name had me too confused for a few minutes.

Oh, a top view finally. Cool it does at least have M. The young lady could set an aperture that way.

When I learned photography there was only Manual setting, and the use of an exposure meter. I actually learn how to do photography and not be a slave to the camera. Sure I'll use many of the features of my DSLRs but I know why those features are there.

I recommend the Lumix FZ80. I bought mine used on ebay for $235 last year. Has a 20mm-1200mm zoom lens. Can shoot in aperture priority (though the lens is limited from f3.5 to f8), shutter priority, auto iso, or manual settings. Also shoots 4K video in auto mode or manual mode. Also shoots macro. Light weight. It's my go to camera and I have a bunch of dslr cameras and lenses.

The Lumix looks really nice but, moments before, I had just bought a new Nikon D3500 with AF-P 18-55mm VR Lens & 70-300mm Dual Zoom Lens. From Amazon.

As to the lenses, I have no idea what "AF-P" and "Dual Zoom" mean. Can anyone explain?

Double zoom means there are two zoom lenses in the kit, the 18-55 and the 70-300. AFP is a newer 18-55 zoom for newer cameras like the D3500. It's faster and quieter than the older model. That's a great kit and should do everything your granddaughter wants from a camera for a long time to come. Congratulations on a great choice.

Per a review of the Pentax X-5:
"Experienced photographers may find off-putting the fact that the only format in which images can be saved is as compressed JPEG files; there's no raw file support. Nor does the X-5 support Aperture- or Shutter-priority shooting; you have a choice of Program Auto or Manual exposure modes, plus the usual raft of consumer-friendly Scene modes."
If you can find a K-50 it can support all of this and more. It is a little older, so a used one may not be too expensive. That is my main DSLR.

I would suggest a Canon M50 or a Sony a6*** series. Both have an APS-C sensor, can shoot in raw, have all the modes on the dial and multiple lenses available. I had a Sony a6000 and they are quite reasonable now. The Canon with kit lens can be had for under $500. Check the refurbished Canon site. I just picked one up for my granddaughter and she loves it. It was brand new in the original box for a refurbished price!! It has a fully articulated LCD that is great for "selfies"!! The touch screen works for EVERYTHING.
