You should take a chair lift up to the top of the mountain. There is a waterfall on the road up to Whistler. It has been a few years since I was there but it is beautiful.

Maybe not what you are looking for...but there is a (world class) great restaurant on 11A (Chuckanut Drive) just South of Bellingham. The Oyster Bar on the Chuckanut! It has window seats hanging off a cliff looking over the water...incredible. Catch it for a great sunset!

Or the mountain-to-mountain gondola.
Assuming you're driving: Check drivebc.ca - it's summertime and like every summer, there is a lot of road construction and -repair going on.
From the road between Vancouver and Whistler, there are some fantastic views, worthy of a photo.
Suggest you check in at the tourist information office(s). Look for road signs:

These Tourist Information offices will have the most up-to-date info for the local area and often for further away as well.
"Rest Area" signs could also be important. You can pull in and stay up to 8 hours. These rest areas all have "facilities" ranging from a hole in the ground to the most luxurious restrooms you can imagine.
Finally: Enjoy your trip and drive carefully!
A lot of places / viewpoints along the See-to-Sky road (Vancouver - Whistler). Some:
Porteau cove, particularly beautiful at sunset;
Shannon falls;
Sea-to-Sky Gondola, better buy tickets online to skip the waiting line;
Alice lake Provincial Park - the Four-lakes trail if you like "enchanted" forests. Take bear spray with you :);
Brandywine falls.
Also, north of Whistler, along the road 99 are Joffry and Duffey lakes. 99 is very, very beautiful!

You can get beautiful sunset photographs from Larrabee State Park, it's right on the water and there is a rocky shoreline. If you like urban photography, downtown Bellingham has many beautiful turn of the century buildings, and it's a great place to visit.

If you like birds, a visit to the Reifel Migratory Bird Sanctuary out West of Ladner (on the South bank at the mouth of the Fraser R.) is well worthwhile. Check online to see if it's really slow for birds when you're going, but there are some residents (Sandhill cranes, for one) that are pretty inured to people and cameras.

We were in Whistler a couple of weeks ago, driving up from Seattle. As someone already mentioned, part of the drive between Vancouver and Whistler takes you along the water, and the views are beautiful. There are several pull-offs for viewing.
We did an easy hike to Brandywine Falls, a provincial park with a nice waterfall. However, if you google “waterfalls near whistler”, you’ll find there are several others close by.
We didn’t do it, but the ski lifts from Whistler look great. You can take the Whistler ski lift up, do the peak2peak route and come back down the Whistler Blackcomb lift. It’s a bit pricey at $63 CAD per person for a senior.
