I also had a student that I helped make a camera mount on the arm of his wheel chair. It was pieces parts from a tripod. It freed his better hand to operate the controls rather than trying to hold the camera and trigger the cable release with his mouth. A fully articulated viewing screen may help too. There will be a way for you to shoot great shots. I’m sure others here will also have some great ideas for you. As any teacher will tell you: there is no such thing as a dumb question. Welcome to the group! I also recommend getting the feel and viewing aspects of a camera by trying them out. Everything from wearing glasses or not, the size and articulation of the screen to the heft and hand comfort are really important.
I also have had students with various challenges over the years and I learned an important lesson: We are all TABs....Temporarily Able Bodied. One of the better photographers in my local club is much younger than you and became challenged only recently. We have gone shooting together and there is no indication in his work of how he gets around.

I suggest you look @ some Pawn Shop cameras. Inexpensive & somewhat risky; I have had good luck with them. Consider this another adventure----Henry

I'd suggest a decent bridge camera.
You'll get a lot of range, but without the hassle of multiple lenses, flashes, accessories, etc.
The Nikon P900 would be excellent.

I have a lot of dslr's but last year I bought the Lumix FZ80 bridge camera with a 20mm-1200mm zoom lens and 4K video. I bought mine used on ebay for $233 with shipping, but a new one costs about $298. I use this camera more than my dslr these days because it is light and convenient to grab and go. I highly recommend it along with a tripod for video.
