Just bought my D850 and Nikon’s Holy Trinity of lenses. (14-24, 24-70, and 70-200) I’ve been looking for a bag but can’t decide on a backpack or shoulder bag. Any recommendations on a nice, roomy bag?

I have tried both types. In the end I gave up the shoulder bag due to the asymmetrical loading of my shoulders and back pain. I would go for a back pack. If you want you can carry these with one strap for a short period, but when using both straps it is more comfortable. Far too many of us have an entire collection of bags/packs that we acquire until we find the one that works best for us.
If you do any air travel with your cameras, you want to be sure an get a pack that meets
all the airline size limits for carry-ons. My $0.02. Good Luck.
I use both, depending on what I want to carry and where I am going.
Hiking Acadia, the backpack, camera in hand (hand strap) or around neck.
Theme parks & one day local outings, the shoulder bag.
Shoulder bag works as a carry-on for airlines.
(I carry the shoulder bag cross-shoulder. Easier on the neck and back.)

I got a sling bag from ThinkTank. You can move it to your back like a backpack or carry it on your side or in front of you. When it's in front you can rest your elbows on it.

PS: I have the 14-24-70-200-500 lenses. All great lenses, but the only one that doesn't get much use is the 14-24. It's a great lens but I don't do a lot of really wide angle work and that lens is kind of bulky and doesn't fit well in the bag with all the other stuff I carry in there. Most of the wide angle shots I do are static, so I find I can just stitch shots together with the 24-70.

You have some heavy stuff. You need a bag worthy of your equipment. The following NIKON camera bag is roomy, was expensive and now on sale, padded interior and padded shoulder strap, plus lots of pockets and room for more.

The strongest shoulder bags I've ever checked out are the LowePro Magnum 200AW, 400AW, 650AW. They have a one-piece molded bottom that can take a lot of weight. I hate bags that have a bottom that sags under the weight of the gear inside. These bags can take the weight. I have the 200AW. It's a fairly large bag. The 400AW and 650AW are even larger. They also have a rain cover that pulls out of a zippered pouch.

I us a Lowepro NOVA 200 AW Shoulder bag. I've tried backpacks, but didn't like having to set the backpack down to retrieve my gear. With a shoulder bag you can retrieve gear while the bag is still on your shoulder, way more convenient when at a shoot and you need gear asap.

Check out the Temba Messenger 15. I have this bag. Love it. So well designed. The best part: you can access the main compartment through the long zipper across the top of the bag so you don’t have to flip the lid to get into it. It also has powerful velcro along the back on the outside that will slip down your raised roller carry-on suitcase extremely securely as your “personal” item carry on and stores under your seat. It's the only one in the Nova series that has a reinforcing panel in the bottom. Unfortunately, I believe they eliminated the rubber strips underneath in the new redesigned Nova 200AW II bag. I have one of Lowepro's Magnum 200AW bags also. Very strong bag.
